Watch for the ripeness of the grape varieties, black grenache and carignan, syrah, mourvèdre, wait one month on the marc until the sugars are exhausted, wait for the end of an 18 month ageing period in old barrels and then leave the time, about one hour, to the opening to appreciate.

The grapes come from a terraced vineyard, "Les Espérades", located near the sea, between Banyuls-sur-Mer and Port-Vendres. The soils are largely composed of weathered brown schist, and the planting density is 5,000 vines per hectare. Gobelet pruning is used, and the yield from the 70-year-old vines is 20 hectoliters per hectare. The grapes are harvested by hand in small crates, then fermented in steel vats and used wooden barrels. Aged for 18 months on fine lees in 600-liter wooden barrels, used barrels and steel vats.
