The Vin Jaune du Domaine des Ronces has a bright golden color. It reveals very particular aromas of oxidation, nuts, dried fruits, and spices.
The mouth is harmonious and balanced with a powerful attack.
In the mouth, it expresses itself with exceptional aromas: walnuts, green apples, dried fruits and exotic spices (curry, saffron, ginger).
The Vin Jaune is a wine in its own right, many dishes compete for its favor: from poultry to grilled lobster, from Comté to exotic dishes .... This wine can be kept for 20 to 30 years.
Vin Jaune is subject to a specific aging process because, after fermentation, it must be kept in oak barrels for at least six years and three months without crossing or filling the barrels, i.e. without replacing the part of the wine that evaporates.
During the aging process, a veil of yeast develops on the surface and protects the wine from oxidation by preventing it from coming into contact with the ambient air. Thanks to these yeasts, the Vin Jaune mysteriously acquires its complex organoleptic characteristics.
At the end of the maturing process, we put the wine in a special bottle, the "Clavelin".
This bottle is the only one authorized and contains only 62 cl of Vin Jaune. This originality is explained by the fact that one liter of grape juice is reduced to 62 cl of Vin Jaune at the end of the aging process.
