Terroir : Minervois has been a quality wine producing region since Roman times. The southern Mediterranean facing slopes are rich in limestone, sandstone and partly clay marl, with plenty of sunshine and stable climatic conditions, even at harvest time, the night temperature averages around 17 degrees Celsius, a significant difference in temperature that helps the grapes retain their innate ripeness in addition to the acidity that is so rare in South France.

Winemaking: Anne and Jean-Paul wanted to make a wine that was not just a Burgundy, but a reinterpretation of the true face of South France, combining power and elegance, a revolution in the expression of South France's varied terroir and the ideas of its winemakers.

Vermentino is a late-ripening grape variety widely planted along the Mediterranean coast, especially adapted to dry and hot climates and poor soils. It is mostly found in France and Italy, as well as in the Mediterranean coastal regions and islands: in France, it is mainly concentrated in Provence, Corsica, and the Languedoc-Roussillon region.

Roussanne originates from the northern part of the Royale Valley and is more commonly grown in the south of France, where the warmer climate and longer hours of sunshine favor full ripening of this variety.

This wine is vinified in stainless steel tanks, retaining more fresh fruit aromas, on clay, limestone, sandstone and marl soils. The nose offers a rich white floral bouquet, with attractive peach, lemon and grapefruit flavors on the crisp acidity, and a distinctly mineral finish.
