The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
he bottled version of Oude Pinot Gris Tilquin à l'Ancienne was first released in the fall of 2018. In October 2017, the gueuzerie received 1,000kg of organic Pinot Gris grapes. These grapes were destemmed and crushed before being placed into stainless steel fermentation tanks with young lambic. After 3.5 months of maceration, the concentrated grape lambic was blended at a rate of 25% fruit concentration for the 2017-2018 season.
