Tasting:

This wine, with a yellow-gold color, has a quite powerful nose with aromas of very ripe exotic fruits (pineapple, mango...). It has a full and long palate, finishing with notes of hazelnuts. Food pairing: fish, white meats...

On average, 5 years to preserve the fruity character of Sauvignon and the terroir's characteristics.

Estate:

The estate produces both Sancerre and Menetou-Salon appellation wines. The history of the estate dates back to the 17th century. Roger Champault continued this family adventure until the succession of Claude and Laurent in 1996. As pioneers, they equipped themselves with modern equipment (temperature-controlled vats, sorting tables, ...) while preserving traditions.

The diverse soils allow for diversity in the cuvées and offer distinct tones to the wines. Planted on hillsides with renowned exposures and terroirs, the estate now extends over about twenty hectares. The estate is also planted on three types of soils, but the Kimméridgien (Terres Blanches) represents the majority of the vineyard, with 12 hectares. This geological period forms the high hills of Sancerre.

Technique:

Average age of the vines: 50 years. These old vines bring roundness and generosity.
Terroir: clay-limestone (Kimmeridgian marls dating back to the Upper Jurassic, 150 million years old)
Winemaking: The harvest is selected at optimal ripeness (40 hl/ha). After clarification, the must ferments in 400-liter barrels, giving the wine a rich and slightly woody mouthfeel. After fermentation, racking and putting back on fine lees in barrels. Regular stirring until bottling in September to provide suppleness to the wine while preserving its minerality.
