Domaine des Roches Neuves bestaat al sinds 1850 en heeft een uitzonderlijk terroir dankzij de kwaliteit van zijn kalkhoudende ondergrond die bestaat uit tuffeau. Thierry Germain staat sinds het begin van de jaren '90 aan het roer en een van zijn eerste beslissingen was om de 22 hectare wijngaard om te schakelen naar biodynamische wijnbouw.

Twee regels leiden zijn werk in de wijngaarden: lage opbrengsten en oogsten wanneer de druiven volledig rijp zijn.
