Entirely vinified and aged in amphora.The Roches Neuves estate has been in existence since 1850, and enjoys an exceptional terroir thanks to the quality of its chalky subsoil composed of tufa. Thierry Germain has been at the helm since the early 1990s, and one of his first decisions was to convert the vineyard's 22 hectares to biodynamic viticulture. Two rules guide his work in the vineyards: low yields and harvesting when the grapes are fully ripe.
