Vineyard operation :
Reasoned vine-growing with natural grassing (ray grass and meadow fescue).
Mechanical soil cultivation with plowing the cavaillon (patch of earth between two vines). Leaf thinning and green harvesting allow maturation and yield control
Harvest, vinification, and breeding :
Second manual grape harvest, to have a perfect maturity Then they are slowly pressed pneumatically
Alcoholic fermentation is then done in 300 l barrels with no yeast addition at low temperatures. Raised on lees in foudre barrels.
