**MERCUREY**
**Presentation**
Mercurey stands as the largest and most prominent appellation within Burgundy's Côte Chalonnaise, encompassing both red and white wines from the communes of Mercurey and Saint-Martin-sous-Montaigu. This distinguished appellation, elevated to AOC status in 1936, produces predominantly Pinot Noir-based reds (95%) alongside exceptional Chardonnay whites. The terroir combines limestone-clay soils with optimal southeast-facing exposures, creating ideal conditions for both varietals. Mercurey benefits from 32 Premier Cru climats, reflecting the appellation's quality potential and diverse microclimates.
**Tasting Profile**
Mercurey reds display characteristic Burgundian elegance with medium body and refined tannin structure. The bouquet reveals red berry fruits—cherry, raspberry, and strawberry—complemented by subtle spice notes, earth undertones, and delicate floral hints. With aging, these wines develop complex tertiary aromas of leather, undergrowth, and game. The palate demonstrates excellent balance between fruit concentration and minerality, with a persistent, harmonious finish. White Mercureys exhibit fresh citrus and stone fruit character, enhanced by subtle oak integration and distinctive chalky minerality that speaks to their limestone terroir.
**Food Pairing Recommendations**
Red Mercurey pairs excellently with roasted poultry, grilled salmon, mushroom-based dishes, and aged cheeses like Époisses or Chaource. The wine's moderate tannins complement duck confit and coq au vin beautifully. White Mercurey enhances seafood preparations, particularly sole meunière, lobster thermidor, and creamy chicken dishes. Both styles showcase remarkable versatility with traditional Burgundian cuisine and contemporary French gastronomy.
