Laurent Juillot, 4th generation, is at the head of this large 31-hectare Mercurey estate, assisted by his wife Carine.
Founded in 1928 in Mercurey, the vineyard comprises 21 hectares of Pinot Noir and 10 hectares of Chardonnay.
Each year, the estate produces 180,000 bottles from around twenty appellations, half of which are Premiers Crus and Grands Crus.
In just a few decades, the estate has expanded from the Côte Chalonnaise to the Côte de Beaune, with vines classified as Grand Cru in the Corton and Corton Charlemagne appellations.
Both attached to history and to the times, Laurent has no hesitation in innovating and thinking about the future, forging new know-how from the lands he has explored.
His father Michel, who is very well known in the region, also gave him wings and the desire to pass on his knowledge in turn. Since 2020, Pierre Juillot, Carine and Laurent's son, the 5th generation, has played a full part in the life of the estate.
In recent years, Laurent and Pierre have been innovating a great deal in the vat room and in the vineyards, asking themselves a lot of questions in order to adopt a more sustainable viticulture approach.
This has enabled the estate to obtain the HVE label in 2019.
Everything is harvested by hand, the grapes are sorted and a vertical press takes pride of place in the vat room during the harvest. The yeasts used in the vinification process are indigenous and the vats are filled by gravity.
These changes have had an impact on the quality of the wines, as can be seen in the wine press:
