Nous avons choisi les terroirs de Cazelles pour leur diversité de sols argilo-calcaires et grès, la découverte de 4 cépages majeurs (Carignan, Grenache, Syrah et Cinsault), la qualité des vignes de divers âges, l'environnement privilègié au pied de la  Montagne Noire, l'altitude de 220 mètres (comme Vosne Romanée...)

Un bâtiment est né pour cultiver, recevoir, vinifier et élever ces beaux vins de terroirs. Il a été conçu avec grande attention dans le respect des énergies, des vins, des hommes... Un beau bâtiment d'architecte avec des matériaux simples et nobles...la Terre cuite, le Bois, l'Inox... Tout est rond... la route, les collines, les cuves, les fûts... les vins.

The story of Domaine Anne Gros & Jean-Paul Tollot

Anne Gros has been making wines from some of Burgundy's most coveted appellations for years. So has her husband, Jean-Paul Tollot, at Domaine Tollot-Beaut. But Anne and Jean-Paul revived an old dream of working together, and with their shared wealth of experience, they embarked on a project that many of their Burgundy colleagues have probably shaken their heads at: They wanted to make wine in the South of France.

Initially, Anne Gros & Jean-Paul Tollot focused on Provence, and they found a beautiful vineyard with nice fields. But no, it was a little too nice, a little too bourgeois. Anne and Jean-Paul were looking for something more raw and less established. Instead, they turned their attention to Languedoc, eventually settling on the small village of Les Cazelles at the foot of the Montagne Noir in the north-eastern part of the Minervois appellation. In 2006, the couple invested in some high vineyards with old vines and built a new and modern winery from scratch. Used to working with Pinot Noir and Chardonnay, Anne Gros and Jean-Paul Tollot were now learning to vinify grape varieties such as Carignan, Syrah, Grenache and Cinsault.

The wines from this couple are very different from those they make in Burgundy. Yet there is a distinctly Burgundian touch. The style is cool, austere and acidic, combined with the juice and power that characterises the wines of Languedoc. With a total of 14 hectares planted with vines, Anne Gros and Jean-Paul Tollot have the opportunity to make a selection of cuvees consisting of different blends. Some of the vines are over 100 years old - others are quite young.

The wines from Domaine Anne Gros & Jean Paul-Tollot are served in several of France's top restaurants and consistently receive high ratings from international wine critics.
