**Saint-Estèphe**
The northernmost appellation of the Médoc's prestigious Left Bank, Saint-Estèphe represents the essence of structured, age-worthy Bordeaux. This 1,250-hectare commune benefits from higher clay content in its gravel-based soils, creating wines of exceptional backbone and longevity. Home to renowned châteaux including Cos d'Estournel and Montrose, the appellation mandates Cabernet Sauvignon and Merlot as principal varieties, complemented by Cabernet Franc and Petit Verdot.
**Tasting Profile**
Saint-Estèphe wines exhibit remarkable structure and tannic architecture. In youth, they present intense cassis, blackberry, and graphite minerality, often accompanied by cedar, tobacco, and subtle spice notes. The higher clay proportion yields wines with pronounced acidity and firm tannins, requiring extended cellaring to reach optimal expression. With maturation, these cuvées develop complex tertiary aromas of leather, forest floor, and dried herbs, while maintaining their characteristic freshness and precision.
**Food Pairing**
The robust structure of Saint-Estèphe pairs magnificently with red meat preparations. Côte de bœuf, rack of lamb with herbs de Provence, and game dishes showcase the wine's power. Rich, aged cheeses like Roquefort complement the wine's complexity. For younger vintages, decanting enhances accessibility, while mature bottles reveal their full potential alongside refined preparations of duck or venison.
