The quirkiest and easiest to drink wine from Nicolas. A superb bouquet of dry herbs and sour cherry on the nose, then the same red fruits show up on the palate, which is fresh and supple.Try it with the classic ‘Agneau Corse’ or that delightful dish of pork fillet and fresh figs they serve in the summer.

Technique :


Récolte manuelle, transport de la vendange en box de 300 kg. Les raisins égrappés sont placés dans une cuve béton. Après une macération préfermentaire à froid de 48 heures, le départ en fermentation se fait naturellement. Un léger remontage quotidien pour arroser le chapeau est effectué, toute forme d’extraction est proscrite afin de préserver la finesse des tanins.

Le vin est élevé au moins 24 mois et mis en bouteille sans filtration ni collage. Seul le SO2 est utilisé, la dose totale figure sur l’étiquette.
