**FITOU**
Fitou represents one of Languedoc's most distinguished appellations, established in 1948 as the region's first AOC. This robust red wine originates from two distinct terroirs in the Corbières massif: the coastal maritime zone and the mountainous inland sector, each contributing unique characteristics to this compelling blend.
**TASTING PROFILE**
Fitou exhibits a deep garnet to ruby color with pronounced intensity. The nose reveals complex aromatics of dark berries, garrigue herbs, and Mediterranean spices, often accompanied by notes of leather, tobacco, and mineral undertones from the schist soils. Predominantly crafted from Carignan and Grenache, with Syrah and Mourvèdre additions, Fitou delivers a full-bodied palate with firm tannins and balanced acidity. The wine showcases flavors of blackcurrant, plum, and cherry, enhanced by herbal nuances of thyme and rosemary. Well-structured examples demonstrate excellent aging potential, developing tertiary notes of cedar, game, and earthy complexity over 8-15 years.
