Gilles Berlioz is een gelukkige autodidact wijnbouwer; hij is landschapsarchitect van opleiding en begon in 1990 met 0,8 hectare in het Chignin-gebied. Nadat hij tot 7 hectare conventioneel had verbouwd, bracht hij de oppervlakte terug tot 3,5 hectare en besloot hij te ploegen met een paard. De volgende logische stap was de overstap naar biologische landbouw, gevolgd door biodynamische landbouw (in 2006).
